Hey guys. Happy Monday! Hope your day is off to a great start and that you had a fantastic weekend. It was a low-key weekend over here in Casa de Collins.
Saturday
I worked on Saturday and had big plans to swim when I got off of work. I am so antsy to do *something* physical. I joined the Y close to my job last week and have yet to make an appearance at the pool. I was so excited to finally get back into things, and I gathered up all of my swimming essentials the night before.
Right before bed, I looked up the pool schedule and saw that on Saturdays they are open from 8 to 3:30 and are closed from 11am-1pm for maintenance. Whaaaaat? I was working from 7am-4pm on Saturday, so I basically wouldn’t be able to swim before or after work or on my lunch break. No bueno.
Maybe this all was for the best because I was so tired when I got home from work on Saturday. I haven’t been sleeping well this past week and it was really starting to catch up to me, so I crashed on the couch the second I got home from work. I wasn’t the only one napping.
K and I went to Panera for dinner that night. Don’t judge me for going to a chain restaurant even though I live in an area with amazing local places. I love Panera’s Greek Salad and Broccoli Cheddar soup. I especially love that we can be in and out of there in 45 minutes. It was just one of those days.
Sunday
I didn’t make any plans to venture too far from home on Sunday because I was on call. This was probably good because I ended up getting called. I worked for a little bit and stopped by Concord Mills. I had some GAP cash to use but ultimately didn’t find anything worth using it on. I’m not into clothes shopping much since I started wearing scrubs to work!
This Week
My goal this week is really just to make it through this week After traveling last weekend, coming home to all of that stuff that happened at our apartment and then working 9 days in a row, I will be counting down the days to Friday. Which is sad, because I realize it’s only Monday.
I’m starting physical therapy on Wednesday and I’m kind of nervous about it. I’ve never done PT before . My knee is starting to feel better, which leads me to believe my shoes were what was causing the issue (or eat least preventing my knee from healing when it initially started hurting after a run). My doctor had said to give it 2 weeks in the new shoe and if I hadn’t seen improvement then to start PT.
I wasn’t quite sure whether to cancel the PT appointment or not since there has been some improvement, but I ultimately decided I would go at least a few times and evaluate my progress from there. I stare at my bike every single day just waiting until I can ride again.
I’m also going to go swimming at some point, I swear.
Something else kind of cool going that I’m doing this week is talking to a local girl’s swim team about eating healthy when you’re an athlete. They are teenagers and some are apparently getting worried about body image. I’m really looking forward to meeting with them… I’m sure it will remind me of when I was a school dietitian!
On the food front, here’s what’s on the menu this week:
- Spaghetti with meat sauce
- Orange chicken & egg rolls
- Beef stew
- Baked chicken with mixed vegetables
