Hey there, friends! Happy Wednesday to you! I’m about to head to my 2nd PT appointment but before I leave, I wanted to share a What I Ate Wednesday post with you.
My meal selections are from yesterday, which I would like to think of as a “I-give-no-shits” kind of day. I was at Day 18 post-op… 18 days of icing… and elevating… and icing some more. I’m back to icing hourly for the next few days and I think the lack of mobility and human interaction is seriously starting to get to me.
Lily is trying to keep me from going off of the deep end but I think she secretly loves me being home all day.
But back to me complaining…. I didn’t sleep well Monday night because my knee hurt so much from my first PT appointment, and I was overall just feeling kind of blah yesterday. So my food selections were all over the place and make no sense nutritionally… but I’m going to share them anyway!
Breakfast
I usually make it a point to eat something for breakfast but I was not feeling it at all yesterday morning. I wasn’t hungry and was just kind of feeling off. I would have skipped this meal had it not been for my Rx anti-inflammatory, which is supposed to be taken with food.
I ended up eating a banana with peanut butter and laying on the couch all morning with ice on my knee. Very productive.
Lunch
When I was laying on the couch all morning, I thought it would be a fun idea to go out to eat for lunch. But then I realized it was 2pm, and the idea of showering and putting on real clothes was just not that appealing to me at that moment.
So I fixed a sandwich for lunch instead, turkey on whole wheat with mozzarella cheese and two slices of tomato.
Snack
Something strange happened (for me, at least) after I had assumed my spot back on the couch after lunch. I started getting a strong craving for… Cheetos. I knew there was a bag in my pantry somewhere. I found it. And destroyed it.
I once read an article online of “10 Foods Dietitians Say They Will Never Eat” and Cheetos was one of them. What can I say? I like to break stereotypes.
Another Snack
So after I spent literally 75% of the day laying on the couch, I decided I should to go to Target and buy random office supplies that I don’t really need. This is one of my all-time favorite hobbies.
I stopped by Harris Teeter on the way home and bought some asian pasta salad from their deli.
I have no idea what drew me to this pasta but it was good.
I have no regrets.
Dinner
So after a few questionable snacks, I somewhat pulled myself together for supper. I ate a slow cooker mango ginger pork roast over brown rice with a garden salad on the side.
All I could think about when I was eating was how the rice cooker knows when the rice is done cooking. Does anyone know?! Is it based on the steam? I need to google this.
As far as my salad is concerned, that tomato is the same tomato I used for my sandwich earlier. I left it sitting on the counter all afternoon and debated whether or not I should toss it when I realized I never put the remainder back in the fridge.
I am a certified ServSafe instructor so this was a big decision for me.
I decided to live on the wild side, obviously, and I’m happy to report this morning that I have not had any, ahem, GI mishaps thus far.
Thoughts on the Day: I typically like to look at my WIAW eats and discuss where I could improve. I don’t think we need to go there today I promise to report back next Wednesday with a more inspirational post.

I’m sorry you had a rough morning yesterday. I wish there were something I could do to make things better. Just know you’ll be healed in no time. Until then though, smile & keep enjoying life to the fullest. Every moment counts <3

All your meals look so good. I love seeing some “real” eats and that sandwich looks so good. I love turkey and tomato. (And confession – i don’t always put it in the fridge … but have never had any issues!) Thanks for sharing your WIAW – I love sharing mine and spying on everyone else’s meals for inspiration!
I have to completely bypass the $1 section or I would come home with soooo much stuff I would never use!

Office supplies?! Oh heck yes!
My desire to put on pants determines a lot on weekends. For the most part, no pants wins :)
My addiction to office supplies is unreal. I used to always go for colored pens but now I’ve moved on to little notebooks. Gotta have a little notebook for evvvvvvverything!
I’m not sure about how the rice cookers work… I just know that I love them! ;)
Rice cookers are definitely one of the best kitchen appliances ever. I rate it right below the crock pot.
Your dinner looks delicious! I have not been laid up with a leg injury, but when I was pregnant I would take a lot of rests and naps in the afternoon and would binge watch shows on Netflix. Ha!

I haven't had knee surgery…but I did have surgery a few years back and went CRAZY! HUGS! It'll be better soon! :)

Great meals! I did have surgery on my ankle…and I did go crazy. We were in Alaska and not close to family…So it was easy to feel a bit nuts!

I love those Cheetos! I recently discovered the cheddar jalapeno flavor and can seriously inhale the whole bag in one sitting on my “off” day :p
