Hi friends! Did you have a nice weekend?
I worked on Saturday, and it was my first working weekends since my surgery. I was pretty nervous about it because I really used the weekend before that to rest and recuperate after being on my feet all week. It ended up being kind of rough! Hoping being on my feet will get easier as time goes on. I also feel like I have been doing a lot of complaining around here lately, so I’m sorry about that!
There was a highlight on Saturday, and that was trying Subway’s new Greek sandwich.
Feta cheese + tzatziki sauce? Um, yes please. I ordered the sandwich as it was originally described (tomatoes, cucumber, onions, feta cheese, sauce) except I also added banana peppers. I liked it!
I was on call on Sunday and spent approximately 8 hours in my recliner icing my knee off and on. Very exciting. Other things that happened….
Did laundry.
Filed taxes <— THANK YOU, JESUS!
Ate Pho.

So last week, someone commented on one of my posts and asked me how I make my smoothies because they were having a hard time getting them right. I completely understood where this question was coming from because when I first started experimenting with smoothies, they were either:
1.) overpowered by the spinach taste (and therefore gross)
2.) overloaded with carbs to the point where I was drinking a sugar bomb
or
3.) a thick, clumpy mess
I think I’ve finally gotten then hang of things… I have posted a few recipes here and there but I thought I’d break the basic proportions down for you.
1 C liquid: I usually go with cow’s milk, which has more protein than other types of milk + lots of other goodness (like calcium and potassium). If I want a lighter smoothie then I will sometimes use good ole’ water.
1/2 C sweet frozen fruit: my go-to is a banana, sliced and frozen. My trick is actually to slice and freeze bananas when they’re getting really ripe so I don’t have to toss them. Dates is another sweet fruit you could use, although you could probably just use 1 date and be good.
Handful of greens: You can go fresh or frozen here. I like to use 1/2 C frozen spinach because it’s usually what I have on hand. If I have fresh spinach then I will use that, but will probably use more like 1 Cup
1/2 C other fruit: this is where I toss in whatever else is in my fridge. My favorite is either blueberries or pears.
The key for me is that if I’m using frozen bananas then my second fruit will be fresh. It makes the smoothie too icy and thick for me to have all frozen produce. Also, notice that I don’t use ice cubes since I’m using frozen produce. And lastly, I blend the hell out of my smoothies until they are nice and smooth

This is a really good smoothie break down. How long do your bananas last in the freezer? It seems like after a while, mine will almost get too sweet!
Hey autumn! So I think freezing actually stops the ripening process? I keep mine in for a month or so.
Greek sub?! Yes, please!! I may have to go to Subway this week.

I usually only make smoothies in the summer because I am too cold all of the other months haha. And Subway has feta cheese?! YES!
Yes, feta cheese! Although the way it was advertised, I wondered if it was just a temporary/promotional thing.
This is SO helpful!! I always mess up my smoothies. Ugh, I need to file our taxes tonight… boo!
I was so happy I finished them but I put the wrong employer tax ID and they got rejected!!! So I had to refile, lol.
Ooh this is super helpful! I like this one green smoothie at Whole Foods, but have been too chicken to try my own green smoothie out of fear of the spinach being too overpowering. And I had no idea about a greek sub! I love that sauce, so good! And yay for making it through your work weekend with your knee! :)
When I first started making smoothies, all I could taste was the spinach. No bueno. The key I think is to use a really sweet fruit in there.
Hi Sam! You poor thing, I hope you are well on your way to feeling all the way better soon. And I had no idea Subway made a Greek sandwich — I LOVE Greek food, so I may have to try that. Secondly, I tend to overstuff my Nutribullet (which broke) and make my smoothies too icy. These are some good tips heheh.

Your Subway has tzatziki sauce?! I haven’t never seen that at mine!
I need to start adding juice to my smoothies. They are always a bit bland and even with the fresh fruit I usually wish they were just a little sweeter. I add milk to mine which I think really takes away from the sweetness of the fruit because I can usually just taste a lot of milk, haha.
Maybe swapping out some milk with water would help?
Mmmmmmmmmm pho and shrimp summer rolls are some of my favorite things. I’m not a big smoothie person, except during summer marathon training. I’m an eater, what can I say!
