Hey guys… just dropping in for another What I Ate Wednesday Post.
But first, do you want to know the downside of taking a glorious 4-hour nap after work? Being awake way past your bedtime. Which is exactly when I’m writing this post. So tomorrow should be fun.
This week’s post is from a typical work day these days. I’ve tried to get so much better about meal prep and having things ready the night before. The chances of me packing a well-balanced breakfast and lunch at 6am in the morning are slim to none, but I find that I eat a so much better if I plan things out the night before.
I made some overnight oats with chia seeds, which basically consisted of me eyeballing the ingredients and hoping for the best. Vanilla extract is the key ingredient here. I didn’t add the blueberries and peaches until the morning of.
I used to not really love oats in the morning before work because they feel so heavy on my stomach…. but now I decrease the amount of oat mixture and increase the fruit. It still feels as satisfying but a lot lighter
I packed a salad for lunch, primarily because I had a ton of vegetables from the farmer’s market and I didn’t want them to go bad.
The chicken is actually from some bulk food prep I did on Sunday. I cook a bunch of chicken breasts in the crock pot and have it on hand for a few days at the beginning of the week. Obviously I used it for salad on this day, but I also like having it for tacos, soups, pasta dishes, chicken salad, etc.
I’m going to give myself some mad props for my vegetable intake this day, mostly thanks to this salad.
I’m all about some watermelon these days. I think I could eat 1/2 watermelon in 1 sitting. It’s serious business.
Another current obsession are farmer’s market berries. They are so much better than the grocery store! Of course, added some cottage cheese for protein.
Consisted of a baked pasta dish: whole wheat noodles, peppers, onions, mushrooms and lean ground beef. I actually made a dish of this and saved the rest for lunches.
I have a lot of problems making pasta photos look visually appealing. It tasted good, I promise!!!
So I had an adult beverage that evening, which is my guilty pleasure when I’m watching the Real Housewives of NYC! In celebration of Bethenny, I picked up a Skinny Girl cocktail recently because I had never tried them. The dietitian in my is always curious about products that market themselves to be healthier so I was interested to try it out.
Taste: if I’m being completely honest… not the most tasty beverage, at least for a cocktail. It reminds me of something you could have at a party after you’ve had a few drinks It wasn’t bad but it wasn’t good if that makes sense. I’d be interested to try other flavors.
Nutrition: There are 100 calories in a 4oz serving. This is actually phenomenal when you compare it to the calories in other ready-to-serve alcoholic beverages, which can sometimes be 400-500. Calorie-wise, it’s kind of comparable to a glass of wine. I also appreciated the simple ingredient list. Check out the ingredient list on your standard margarita mix… it’s kind of scary.
Overall thoughts: I think that this is a better option than a lot of mixers or ready-to-pour bottles out there. But I also think that you are probably better off just making your own cocktail with fresh fruit, which can be just as low in calories and only use 2-3 ingredients. I would grab a bottle of this if I was headed to a girlfriend’s house or something and wanted to bring a no-fuss drink option that wasn’t wine.

Lastly, just wanted to show ya’ll my meal prep since I’ve mentioned it here a few times. Just having some things in the fridge ready to grab in the morning has been a lifesaver for me recently!
I see some people out there prepping tons of full meals. I’m not that fancy, but I have been cutting up a lot of produce and doing my chicken prep in advance.
