Hey guys! Happy hump day.
Today is Day #3 with the boot. I completely understand what the doctor was saying about being compliant with keeping my foot in the boot at all times. It’s so tempting to take off. I met a friend for a drink last night and didn’t even bring the thing with me. Awful, I know. Today is a new day, though, and I’m going to be compliant moving forward.

It’s been a few weeks since I checked in with some recent eats. Here’s what’s been going on with my food recently!
I think my love affair with cottage cheese has officially ended and I’m now on a greek yogurt kick. I saw this in the store the other day and immediately wanted to write Chobani a letter to tell them that I loved them.
These do have a bit too much sugar in them for my liking (yogurt has some natural sugar in it already) but I think they are fun for a nice breakfast treat every now and then.
I also have been grabbing greek yogurt tubes in the morning as well. The only problem with these is that I end up making a bigger mess than if I was trying to eat something with a spoon. Go figure. These are low in calories and protein, so they need to be paired with something else. I usually will grab a handful of almonds.
I’m still an egg girl on the weekend. I go back and forth between an omelet with 1 whole egg + 2 egg whites and just making 2 fries eggs. I love the artistry that goes into making an omelet (yes, I did just say that) but sometimes you really just want to eat your freaking breakfast and ain’t nobody got time for an omelet to cook.
I always think breakfast is an awesome time to fit in fruits, which I have done a poor job of recently. Need to get back on that.
My lunches have been all over the place these days. I have been making simple sandwiches like turkey/cheese and PB&J, and also have some tuna from time-to-time.
I was lean, mean, salad-making machine this summer, but that was mostly attributed to the awesome farmer’s market here.
Now that I am not going to be getting as many fresh veggies from there, I’m going to need to re-think my lunch strategy moving forward. I want to start packing well-balanced lunches because I don’t make the best food choices in our cafeteria. I bought these little compartmentalized lunch boxes from Amazon (<—affiliate link). I will report back on how I like them. P.S. They are <$20!
Dinner remains the meal where I get most of my vegetable intake. This is one of my favorite meals because it’s so simple… london broil in the crock pot (just sprinkle with some seasoning and put a bit of water in the bottom of the pot), a baked potato and salad.
I am sad that my basil-season is almost over because I really enjoyed my plant. I trimmed it back the other day and made pesto!
I attempted to make slow cooker pesto chicken with gnocchi and vegetables. I left out the parmesan cheese, though, which is apparently a key ingredient of pesto I also felt like I needed triple the sauce. Do you ever have an awesome recipe idea that you want to share on your blog and then it completely sucks? That was this meal. But yay for basil, right?

Cinnamon toast crunch. LOVE IT and I’m not sorry about it.
