Happy Monday! I hope you all had a great weekend and that all of my US friends had a great Thanksgiving week/weekend.
My family decided to change things up and get together for Thanksgiving on Saturday this year so I had a low-key Thanksgiving day and traveled over the weekend. B and I watched the Macy’s parade, made a breakfast casserole and relaxed around the house on Thursday morning.
4 whole eggs, 2 cups egg whites, 3 slices WW bread, 1 diced onion, pk mushroom and hand full of spinach
It was just us for Thanksgiving day and we debated about going out to eat vs. cooking a meal. Ultimately we decided that it would be fun to make a small Thanksgiving meal for ourselves so that we could hang out at home. Not having to change out of PJs may or may not have been a factor. We decided to forgo a traditional Thanksgiving meal of turkey, dressing all of the sides since we would be getting that with my family on Saturday. We ended up going with a prime rib instead.
I’ve made this prime rib several times and I always use this Bobby Flay recipe. It’s so simple and turns out really well.
For sides, we made the standard roasted brussels sprouts but also tried a new recipe, Cauliflower au gratin with goat cheese. The cauliflower dish was my favorite of the day because it was so tasty and unique. And I love goat cheese! If I had to do it all over again and it was a day where the oven was in high demand, I would have skipped the step about roasting the cauliflower and used frozen (thawed) cauliflower instead. Just a tip if you’re thinking about making it!
The meal was rounded out with a great pinot noir from Oregan. What a great, low- key day <3
We headed up to Virginia on Friday when I got off of work. It’s a 5.5-hour drive, which is a bit much when you’re leaving in the evening. We split up the drive and got a hotel about halfway, and then drove the rest of the way Saturday morning. The long drive was worth it to be able to spend time with this lady!
We hung out, ate lunch together and watched the VT vs. UVA game. VT completely dominated UVA, which I thought was a great ending to our new coach’s first season. We had found out the day before the VT was going to go to the ACC Championship so this win was just like icing on the cake. After the game, we said goodbye to family and headed back to North Carolina.
Sunday Christmas Tree Shopping
Something exciting that happened on Black Friday was that I found out I won a free Christmas tree from any North Carolina “cut your own” Christmas tree farm. The drawing was from the Southern Christmas Show last weekend, and I was really excited because I’ve always wanted to cut down my own tree. B and I looked up the closest farms and tried to figure out the best time to get to one. We are both traveling a ton over the next few weeks and we realized yesterday that there was almost no way that we would be able to drive 2+ hours to pick one up If you live in NC and would like a free tree then please let me know!
So on Sunday, we picked up a tree from one of the local lots instead. Not quite the same as cutting one down but we’ll have to save that for next year.
We didn’t quite realize how big our tree was until we had a hard time carrying it into the house. Then we found out that my tree stand was too small, so B had to go back out and get a bigger one. I will save you all of the details of that fiasco! It looks really pretty now that it’s up.
B had to catch a flight yesterday evening for work but we are going to decorate it together when he gets back later this week. I wanted to go ahead and put lights on it but I don’t have enough to cover the entire tree and Target was all sold out when I went there yesterday. The tree skirt is new from Marshall’s. I liked their selection if you’re in the market for a new tree. I will post pics when it’s done!

Did you do any black Friday shopping? I had my eye on a new GPS watch (Garmin FR920XT) but it sold out before I could purchase it. Womp womp.
