Hey guys! I hope your weekend is off to a great start. I know I missed my weekly Friday chats this week but I’m bringing them to you this Saturday morning!
A highlight to this week was receiving a Hello Fresh package of ingredients to cook 3 dinners!
Hello Fresh is a meal delivery service that sends you everything you need to prepare and cook your own meals- pre-portioned ingredients, recipes and detailed cooking instructions. They reached out to me in February asking if I would be interested in trying their services. This happened at the perfect time because I had literally just been asked about these types of meal delivery services from a client. I tend to purchase and try a lot of things on my own for the primary purpose of being knowledgeable about them when people ask me. So I was really happy to try these meals out this week!
I’m planning a full post about the Hello Fresh products as well as who could benefit from a meal delivery service like this.
Other than dinner plans for tonight, my main project will be setting up my new headboard! I recently moved and was looking for a queen-sized headboard to replace my full-sized headboard (that is now a guest bed). I decided on this beige tufted headboard from Overstock.
I have been really happy with my purchases from Overstock- it’s where I got my first head board and I find the customer reviews to be pretty accurate. I thought this headboard was a nice compromise between looks vs. cost.
Half Marathon Training
I ran the furthest I have ever run in my life this week! On Monday evening, the weather was really beautiful and I went on a 5-mile run outside. It was my long run this week on the training plan and I had a strategy this time: I ran in a new neighborhood and I mapped out a plan where I ran 2.5 miles (very doable for me) and then turned around and came back. I think mentally breaking up the mileage rather than running in a loop helped me feel like the run wasn’t that bad. I also think being in a new neighborhood with different scenery helped.
Honestly, I really haven’t doing well with cross-training. I was planning on going to a cycle class on Wednesday evening but I ended up having to take Lily to the emergency vet (eye issue at the groomer, long story). I know I need to do better!
Here’s my schedule for this week using the Hal Higdon training plan:
- Sunday- 5mi run
- Monday- rest
- Tuesday- 4mi run
- Wednesday- 40 min cross train
- Thursday- 4mi run
- Friday- rest
- Saturday- 40 minute cross train
I’ve been thinking about changing up my Tuesday-Thursday training plan so that I am only running twice per week and then cross training 3x per week. The change would be because I’m truly not great at running and I feel like it is a bit hard on my body compared to cross training (which I really enjoy). Runner friends, what do you think about this? 3 runs vs only 2 runs?

What is one thing you really loved eating this week? We had a Hello Fresh meal that included pork chops, brussels sprouts and sweet potatoes and it was amazing!
